Loin Roast by Krikor

There’s got to be something special about this roast recipe. My good customer Krikor comes back regularly to buy a bone-in loin roast for treating his friends to a sumptuous pork dinner. He has cheerfully shared his recipe:
•    I use a rub by Joe Beef of Montreal.
•    Rub can be found at Seed to Sausage 729 Gladstone in Ottawa.
•    Coat the roast with some good quality oil (Canola or Olive), then the rub, cover and leave in the fridge overnight.
•    Start with a hot oven 400 F and place the roast alone for 20 minutes in a deep pan that can be covered.
•    Put cut up onion, celery and carrots under the meat and roast another 20 minutes at high temp to get the veggies going.
•    Lower the oven temperature to 275 F.
•    Pour some chicken stock in the roasting pan to cover the vegetable, but not the meat.
•    Cover with foil or the pan’s cover and roast for 5 to 6 hours.
•    Take roast from oven and let the meet rest for 10 minutes covered with foil.
•    Slice and serve with oven roasted root vegetables and potatoes.
